Breaking of eggs is a delicate process, if you want to achieve maximum yield combined with optimal separation, only the best egg breakers and separators are good enough. Cleanability and hygienic processing are key factors in our designs.

Breaking & Seperating
The key component in any liquid egg system is the egg breaker. OvoPro offers breakers up to 500 cph. Every breaker exhibits a unique cracker design, combined with optimal drain time, angle and knife timing, guaranteeing the maximum liquid recovery without the need of unsanitary vacuum systems or shell conveyors.

This system produces not only the highest liquid recovery, but the cleanest product to help you produce egg products with longer shelf life. High end breakers now feature our new high purity egg whites system capable of  producing egg whites with fat contents of <0.03%. This system features our electronic yolk scanner that automatically detects yolk in the egg whites. The sensitivity adjustment feature allows the operator to determine the quality of whites being produced. The yolk scanner controls our exclusive zoned cup wash system maximizing cup cleanliness with the lowest amount of water.

The new OvoPro yolk scanner technology with patented software provides a new tool for plant management and guarantees the production of the cleanest egg whites possible. It detects yolk of any colour without adjustments, measures the yolk stain and allows management to determine the size of stain that triggers the smart cup wash and immediately triggers the actuator for clean whites. This eliminates contamination from yolks dripping into the albumen after detection. The system interface provides information on total broken eggs, percent of broken yolks and the performance of each cracker. It records if a specific cracking head is producing excessive whole egg or if it is not breaking the eggs which help manage machine performance and increased yields.

Cleaning of Albumen
The New Albumen Cleaning System automatically removes un-dissolved egg yolk from the egg whites. With the latest vision technology and a multiple radial valve assembly the system detects and removes yolk spots from the egg white stream up to 180,000 eggs per hour. It will help produce consistently high quality egg whites while reducing whole egg and labor. A simple installation requires only an electrical connection and compressed air.

Handling of shells
With environmental regulations becoming stricter by the day, a proper system to handle your empty shells is essential. Depending on your requirements, OvoPro can supply systems that are able to produce a complete dried and ground calcium product.

OvoPro's SC-120 and SC-280 shell centrifuges can handle shell capacities from 10,000 up to 280,000 shells per hour. A unique basketless operation uses a "cone-auger" combination. The benefit of this operation is a reduction in maintenance costs and reduces the presence of shell powder in the liquid. Both centrifuges also include a creative grease capsule with time release that is programmable from 1 to 12 months. This is a key system feature, since having clean grease in the bearings will reduce maintenance downtime and repair costs. The high quality components and compact design allows for quick installation and longer life. OvoPro offers a wide range of Eggshell dryers, with capacities from 1,000 to 15,000 kg/hr. Our technology makes the shell drying process practical and profitable. Natural gas, propane, diesel fuel, or alternative fuels, in an efficient burner, heat air which passes through the perforated bed in the process chamber. The high-velocity air stream creates gentle turbulence in the product removing lighter particles that are directed to the cyclone. The product is discharged through a rotary outlet driven by the conveyor. Operating temperature, product depth, retention time and air flow are variable for optimum performance.
